How and why should you cook legumes?

Legumes are the champions of sustainable eating. Health, agriculture, water—they score high across the board!

Santé Publique France recommends eating them at least twice a week:

  • They are an important source of protein
  • They are rich in carbohydrates, fiber, and vitamins
  • They contain little fat (mainly essential ones)
  • They have a very low carbon footprint
  • Growing them requires very little fertilizer and water
  • They capture nitrogen and fix it in the soil (nitrogen is an essential element for plant growth).
